For pesto lovers: recipe for a delicious rocket and walnut pesto

Do you know why I like all kinds of pesto so much? I like that it is so versatile and made so quickly. In addition, once you have the pesto, you can store it for a long time or even freeze it.
The classic pesto is probably that made from basil. Since autumn is now approaching and delicious nuts are becoming popular, I have prepared the recipe for a delicious rocket and walnut pesto for you. So let’s get to the recipe!
The pesto can be used in so many dishes. It tastes e.g. E.g. very tasty on toasted slices of bread, in salads, with pasta, in meat or fish marinades, as a topping for vegetables, as an aperitif on puff pastry... The list is not complete. ;-)

What you need:
30 g rocket (that's about 2 handfuls of rocket)
3 tbsp olive oil
2 heaped tablespoons of walnuts
1 tbsp pine nuts
1 clove of garlic
1 tbsp parmesan
Salt and a little pepper
For a vegan version, I would either leave out the Parmesan completely or use yeast flakes or a mixture of these and grated nuts (e.g. almonds).

This is what you have to do:
Put all the ingredients in the order listed above in a tall mixing bowl and mix everything with the hand blender until a creamy mass is formed - if the pesto is too dry, add a little more olive oil
So delicious and ready in no time. Enjoy your meal!
