Quick and delicious: smashed potatoes with sage, bacon and mascarpone gorgonzola

Who knows it: leftover cooked potatoes from raclette are in the fridge and waiting to be used. And I found this a few days ago from Tieghan Gerard on her Instagram account @halfbakedharvest (unsolicited advertising) - and found it good today. But – you know me – I spiced it up a bit with a few additional ingredients. ;-) Believe me: The smashed potatoes with sage, bacon and mascarpone gorgonzola were so delicious and had no touch of using up leftovers. So, definitely try it out!

The recipe is a bit improvised and a little “wrist times pi”-like, but you can do it. ;-)

These smashed potatoes taste so quick and delicious.

You need this:

  • approx. 8-10 cooked, small to medium-sized potatoes with skin – or without

  • 50g butter

  • 4 tbsp olive oil

  • 80 g bacon cubes

  • 100 g mascarpone gorgonzola or raclette cheese

  • 8-12 fresh sage leaves – as desired

  • some fresh thyme

  • Garlic powder

  • Salt pepper

Of course you can also leave out the bacon and e.g. B. replace with mushrooms - I would use cooked, well-seasoned ones - or with dried tomatoes.

The leftover boiled potatoes become a new, very tasty menu.

That's how it's done:

  • Preheat the oven to 220 degrees

  • Place the cooked potatoes on a baking tray lined with baking paper

  • Using a masher or fork, flatten the potatoes and break up the mashed potatoes a little

  • Drizzle some olive oil – about 3 tablespoons – over the potatoes and add a few pinches of salt

  • Now cut the butter into narrow pieces - approx. 2-3 mm - and place them on the potatoes

  • Then sprinkle the garlic powder over it, distribute the bacon cubes over the potatoes and pour the Parmesan evenly over them

Garlic in powder form is a good alternative to fresh garlic and is useful wherever it would sizzle.

The mascarpone gorgonzola gives the dish an additional kick.

  • Finally, place the sage leaves on top, as well as the fresh thyme leaves and drizzle the rest of the olive oil over everything

The mascarpone gorgonzola is only added to the smashed potatoes at the end of the baking time.
  • Now put the tray in the middle of the oven and bake the potatoes in the middle of the oven for 20 minutes

  • Take out the tray and distribute small pieces of the mascarpone gorgonzola over the potatoes

  • Put the tray back in the oven for about 8-10 minutes, but now in the upper third so that the top of the potatoes, the cheese and the bacon cubes are baked really nicely

  • When the smashed potatoes have gained some color and the cheese has melted, the tray can be taken out of the oven.

  • Now salt and pepper well and put the tray on the table straight away - don't forget the coaster. ;-)

A simple leaf salad or a cucumber salad tastes good with this. Enjoy your meal!
